Simply Sweet and Delicious Strawberry Muffins

Why doesn’t love indulging in a decedent breakfast muffin every now and then? Muffins are one those breakfast staples that give you the sugar rush you need to start your day off right. This recipe is exquisite because not only does it give you a chance to bake with strawberries which are in peak season right now, it adds a touch of cheesecake which makes this muffin different from everything else that is out there. In order to prepare the muffin part of this recipe you’ll need
2 cups of strawberries cut into small pieces
2 cups all purpose flour
1/2 cup granulated sugar
2 tsp baking powder
1/2 tsp salt
1 egg
1/4 cup canola oil
1 cup whole milk
1 tsp vanilla extract
For the cream cheese filling that goes in the center you’ll need
4 ounces cream cheese
1/3 cup granulated sugar
2 tbsp beaten egg
1 tsp vanilla extract
To prepare these muffins begin by lining a 12 pan cupcake/muffin tray with 12 cupcake liners. Preheat your oven to 400 degrees Fahrenheit. In a bowl mix together the dry ingredients for the muffin batter (flour, baking powder and salt but don’t add the sugar!). In a separate bowl cream together the eggs, sugar, milk and oil. Once those ingredients are creamed, add them to the flour mixture and mix together. Don’t mix the batter too much, it should still be lumpy when you’re done combining them or otherwise your muffins will turn out dry.
In another bowl mix together all of the ingredients for the cream cheese filling. Once that has been done begin filling the muffin holders halfway with your muffin mixture. Once they have all been filled halfway place a layer of strawberries on top. Then place a layer of the cream cheese mixture into each muffin holder. Then top with another layer of strawberries and another layer of the muffin mixture. Make sure not to fill the muffin trays all the way up to the top or otherwise it will be difficult to remove them once they have been baked. Bake for about 20 – 25 minutes. You can also check if they’ve been cooked by inserting a toothpick inside and seeing if it comes out clean. Once they are removed from the oven let them cool for about 5 – 10 minutes. You can top them off with a layer of streusel if you like or just serve them as is!
