- 2/3 cups sugar
- 1/2 cup whole milk
- 1/4 cup evaporated milk
- 2 eggs
- 2 eggs yolks
- 1 teaspoon vanilla extract
- 1/2 teaspoon grated nutmeg
- 1 teaspoon ground cinnamon
- 3/4 cup solid-pack pumpkin
Begin by arranging 8 or so ramekins inside of a large enough baking pan – determine the baking pan sized based off of the size of the ramekins you use. Spray the ramekins with some Pam Cooking Spray in order to keep the dessert from sticking.
After you’ve done that, grab a saucepan and heat up 1/3 cups of sugar over a medium heat, continually stirring the sugar until it had melted completely. This should take about 7 minutes, you will begin to notice the sugar taking on a more brown caramel consistency at this point. As quickly as you can, bring about 2 teaspoons of the now caramel substance over to the ramekins. Swirl the caramel in and set the ramekins aside for now.
Preheat the oven to 350 degrees F. Grabbing another saucepan place the whole milk and evaporated milk in over a medium heat, warming the milk up. Once the milk is warmed up, reduce the amount of heat and let the milk simmer in order to keep its warmth. Afterwards, begin to bring 4 cups of water to a boil, keeping it hot. In a bowl large enough, whisk together the eggs, egg yolks, 1/3 cup of sugar, vanilla, cinnamon, and nutmeg. Place the pumpkin into the egg mixture. Then place the evaporated milk into the mix.
Grab the newfound filling and place it into the ramekins, dividing it evenly. Place the boiled water into the ramekins until it is filled up to the top. Bake all of the ramekins for about 35 to 40 minutes. After they are fully baked through, pull the ramekins out and set them to cool. Once they are cooled off, grab some of your special dessert plates and place the plates underneath the ramekin upside down. Let the flan slide out and you’re ready to serve some mouth watering goodness!
