You probably think that sounds too good to be true. You’ve probably never associated such a dish with casserole which is known to be fattening, greasy and unhealthy. That’s not the case with this turkey quinoa casserole though. Quinoa is the most healthy grain that you can possibly put into your body. It’s full of protein and contains a huge number of amino acids that keep your body healthy and fit. Then there’s the turkey which is the most healthy meat you can eat besides fish. Turkey is the best option when it comes to poultry because of its low fat content and nutrients. Next time you’re in the mood for something healthy and delicious try making this dish. Here’s what you’ll need.
2 cups dry quinoa
2 lbs extra lean ground turkey
1 medium onion, chopped
4 medium garlic cloves, crushed
4-5 large handfuls spinach, chopped
2 cups tomato sauce
1 cup whole wheat bread crumbs
3 cups light cheddar or mozzarella cheese, shredded
1/4 tsp thyme, dry
2 tsp basil, dry
Salt & ground black pepper to taste
Green onions and diced tomatoes for garnish
Cook your quinoa according to the instructions written on the package but take it off the heat four minutes before the cooking time suggested on the package. This will prevent your quinoa from getting too mushy when you bake it in the casserole.
Next, preheat your oven to 375 degrees Fahrenheit and grease a casserole dish with either butter or cooking spray. In a skillet sautee your turkey for around 5 minutes on medium to high heat until it’s partially cooked. Drain any liquid and break up your turkey into small pieces. Then add it to your bowl of quinoa. Once you empty your skillet, reheat it and add in your spinach, garlic and onions and cook until they are golden brown. Add it to your bowl of quinoa and turkey. Add the rest of your ingredients to the bowl and mix them until they are incorporated (add in two cups of cheese and save 1 cup for sprinkling over the casserole five minutes before you pull it out of the oven). Now spread out your quinoa mixture in your baking dish and bake for 25 minutes! After 25 minutes your casserole is ready to be gobbled up!
