Dumplings are absolutely one of our favorite things to eat, especially when put in soup surrounded by soft chicken. This Chicken and Dumpling Soup is absolutely perfect when you or one of your loved ones is feeling a little under the weather. We all know that a hot bowl of soup is definitely one of the cures to a common cold. It’s nice to switch it up from the common chicken soup, so if you’re a dumpling lover you’re going to adore quick and easy recipe.
- 1 ½ cups of all purpose flour
- 1 ½ teaspoons of baking powder
- 2 tablespoons of unsalted butter
- 7 pounds of cut up chicken pieces
- 4 cups of chicken stock
- 2 onions (chopped)
- 3 stalks of celery (chopped)
- 3 teaspoons of salt
- 2 tablespoons of chopped parsley
- 1 egg
- 1 cup of water
- ¼ cup of milk
- ½ teaspoon of ground black pepper
Grab a large pot of your choice and begin to place your chicken pieces into while adding in your chicken stock, your 2 teaspoons of salt, and celery. Place heat on medium and allow your ingredients to simmer for 20 minutes until your chicken has cooked. Start preparing your dumplings. Using a bowl mix your egg and milk together. Once done, add in your flour, baking powder, salt and mix until everything has combined well. Begin to cut your butter into the bowl, adding in your 1 tablespoon of parsley and combine everything once again. Once your dumping mix has been prepared using large spoonfuls carefully drop the dumplings on top of the chicken in your pot. Cover up your pot and allow cooking for 8 minutes. Once your 8 to 10 minutes have passed take your chicken and dumplings out of the pot and place them in the serving bowl of your choice. Strain the remainder of the stock left throughout your pot and once strained mix in your water and remaining flour, stirring the mixture until it reaches a boil. Pop your chicken and dumplings back in so they get fully coated with the sauce and once completely covered pour into a small soup bowl and serve.
