The Perfect Potato Casserole to Make at Home

Are you girls ever in that mood where the only thing that you want to eat is comfort food? Healthy food is great and all but sometimes nothing can satisfy your appetite like something warm, cheesy and delicious that elicits memories of fun family dinners around the table. If you’re looking to create a comfort food staple then why not try this cheesy potato casserole that sure to make your stomach grumble just by looking at it. Not only is this meal filling, and ridiculously delicious, it’s relatively easy to make and it’s inexpensive! What more could you possibly ask for in a meal?


Here’s what you need to whip it up:

6 Russet Potatoes

1 Cup of cheddar cheese

1 cup of Monterrey cheese

2 cups of milk

1 chopped onion

1 chopped green bell pepper

2 large eggs

Salt to Taste

Parsley for garnish


Begin by slicing your potatoes in very thin slices. They should be around 1/4 of an inch. Once they have been sliced season them generously with salt and pepper.

Next, preheat your oven to 350 degrees Fahrenheit (160 degrees Celsius) and butter two large baking dishes. They should ideally be 9×9 inch round dishes but if you don’t have one that’s 9×9 inches, another dimension should be fine. Try to make sure however that the dish is at least 8 inches in diameter so that the ingredients have enough room to be laid out and cooked.

Once you’ve buttered your dishes, begin layering half of your potatoes neatly in your baking dish. Cover them with half of the cheese, onions and peppers.

Afterwards, layer the rest of the potatoes, cheese, and vegetables. Now in small bowl, mix together your eggs and milk. Pour it over the potato mixture and bake in the oven for 55 – 60 minutes or until the top has browned lightly and the egg and milk mixture has cooked thoroughly.

Garnish the dish with parsley and serve while still hot! This yummy casserole will be sure to leave you with cravings for seconds (and thirds!) It can be stored easily in the fridge and you can reheat it by popping it back in the oven for 5 minutes! We hope you enjoy this decadent dish at home!
