The Perfect Mexican Nachos

Nachos are one of those foods that no one can ever get enough of. Tortilla chips are delicious enough on their own but when paired with melted cheese, sautéed peppers and deliciously tender chicken they come into a league of their own. While nachos are mostly reserved for big events like the Superbowl and graduation parties they can easily be made with a variety of ingredients anytime of the week as an indulgent and delicious snack.

For the ingredients you will need:

1 packet of tortilla chips. You can choose any variety, flavor or brand that you prefer. The quantity you use depends on how many nachos you would like to make.

1 packet of Kraft Mexican Blend cheese. Pepper jack and sharp cheddar are also great options.
Veggies of your choice. The most traditional choices are red onions, green and red bell peppers and jalapeno peppers. Again the quantity and type of vegetables can be adjusted depending on what and how much you prefer. If jalapenos are too spicy for you, you can certainly leave them out. Bullet chilies are a great alternative to jalapenos. They offer a great flavor but are much more mild.

2 boneless chicken breasts. You can leave out the chicken if you’d like but it certainly adds a ton of flavor to the recipe!

2 limes

1 packet of Mexican seasoning powder (can easily be found at any grocery store)

Begin by marinating the chicken in lime juice and the packet of Mexican seasoning. Leave the marinated chicken in the fridge for at least 20 minutes. After 20 minutes heat some oil in a large pan and sear the chicken until it has been cooked thoroughly. Once it has cooked all the way through, let it cool, shred it into large chunks and set aside.

The next step is to chop up the onions, bell peppers, and jalapeno peppers and saute them until they become soft and fragrant. Set aside along with the chicken once they have cooked.

Place tortilla chips on a large, oven safe platter. Top them generously with cheese, and the chicken, peppers and onions that you set aside. Place in the oven at 350 degrees Fahrenheit until the cheese has melted. There you have it, you’re Mexican nachos are ready to be gobbled up! Remember to serve them with lots of salsa, guacamole, and sour cream!
