Mouthwatering Southwestern Lasagna

Sometimes there are certain food combinations that are irresistible. Peanut butter and jelly, milk and cookies, and burgers and fries just to name a few. You know what else we strongly believe should be on that list? Mexican flavors and lasagna. Every time we’ve tried a lasagna with a twist it’s been infinitely better than traditional lasagna. That’s why we thought it would be great to share this recipe with you. Anytime you’re in the mood for a decadent dish with a  slightly spicy Mexican flavor you can make this! Here’s what you’ll need.


4 cups of canned crushed tomatoes

1 (7 ounce) can diced green chilies

1 (4 ounce) can diced jalapeno peppers

1 onion, diced

3 cloves garlic, minced

10 sprigs fresh cilantro, chopped

2 tablespoons ground cumin

2 pounds of beef mince 

1 (32 ounce) container ricotta cheese

4 eggs, lightly beaten

1 (16 ounce) package Mexican style shredded four cheese blend

1 (8 ounce) package  lasagna noodles

salt to taste

In a large pot of boiling water add in some salt and vegetable oil and boil your lasagna noodles for the time stated on the package. After your noodles have cooked drain them and set aside.

In a large saucepan add in your crushed tomatoes, jalapenos, onion, garlic, and cilantro, cumin, and salt until the mixture comes to a boil. After your mixture has cooked add in your beef mince and cook on medium high heat until your beef has cooked completely. The whole process should take around 45 – 60 minutes but don’t worry because when you taste it, it will be worth it!

After your mixture has cooked pre heat your oven to 350 degrees Fahrenheit. Stir together your ricotta and beaten eggs until mixed and set aside. In a large baking pan assemble your lasagna. First spread a thin layer of your tomato mixture. Then place a layer of the Mexican style shredded cheese over it. Then place a layer of noodles and spoon a layer of the ricotta and egg mixture over the noodles. Cover the mixture with another layer of noodles and then repeat with the sauce, cheese, and noodles until you have used up all of your ingredients. Cover the top layer with a heavy layer of cheese and top with foil. Bake until the cheese has melted and browned. It should take about 20 – 25 minutes. After that your lasagna is ready to serve!
