The thought of eating something deliciously soft, perfectly sweet without being overpowering, and just tart enough to tingle your taste buds sounds too good to be true, right? Add in a cup of tea and you’ve got something straight out of a Jane Austen novel. Well, you too can create something so delicious and envy inducing in your very own kitchen. The next time you’re looking for something to pair with a cup of tea or for a quick breakfast on the go, why not whip up a loaf of blueberry bread? Not only is blueberry bread delicious, it’s incredibly easy to make and it’s the perfect snack for any time of the day.
If you’re looking to make some, here’s what you will need:
1 cup of blueberries
1/3 cup of butter (melted and cooled)
1 cup of white sugar
1/2 teaspoon vanilla extract
1.5 cups of all purpose flour
1 teaspoon of baking powder
1 teaspoon salt
1/2 cup of milk
2 tablespoons of all purpose flour
Start off by pre-heating your oven to 350 degrees Fahrenheit or 160 degrees Centigrade. Grease a loaf ban with butter or non-stick spay.
Once you’ve gathered your ingredients begin by melting your butter. You can melt it easily in the microwave but you can also use the stove if you’re feeling more adventurous . After you’ve melted it, let the butter cool down until it’s almost cold to the touch but make sure it doesn’t re-harden. Add in your eggs one at a time and mix thoroughly with the butter. Add in your vanilla extract next and mix together.
In a separate bowl, combine your flour, sugar, baking powder, and salt and whisk together until thoroughly combined. Make sure to set aside the 2 tablespoons of all purpose flour because they will be used in the next step.
Once you’ve mixed together your dry ingredients add them to the egg and butter mixture. Combine until the batter is smooth but be sure not to over mix because it will result in a dry cake. Now in another bowl, coat your cup of blueberries with the two tablespoons of flour.
This step is crucial so don’t overlook it! This will prevent the berries from sinking down to the bottom (trust us, you don’t want that to happen!). After your berries are coated add them to the batter being careful not to over mix.
Pour your batter into the pan and let it bake for 35- 40 minutes. Make sure to check on your loaf periodically to ensure that it doesn’t overcook. You can stick a toothpick down the middle to ensure that it has cooked completely.
Once you’re loaf is out of the oven let it cool for 10 – 15 minutes before serving. You can enjoy this delicious bread with tea, milk or just on it’s own!
