Healthy and Delicious Breakfast Muffins

Ladies, we’ve all had those mornings where we have a dozen different things to do before stepping out the door and we don’t have time to sit down and have a proper breakfast even though we’re starving.

Whether we have to be on time for class, work or a meeting, it can be difficult to make the time to eat something in the morning. But there’s an easy solution to this problem. Why not have something around that delicious, easy to eat, and requires no effort to put together? It probably sounds too good to be true but it’s not.

Why not whip up a batch of muffins every week and have them ready to go in the mornings. They only take a few minutes to eat, they’re delicious, and they give you just the right amount of energy you need to hold you over until you can have something more substantial.

Muffins aren’t necessarily the healthiest option but we’ve found a great recipe for you that’s nutritious and delicious! These peanut butter and banana muffins are packed with protein.


Here’s what you’ll need to make them:

2 cups of all purpose flour

2 overripe bananas

1/2 cup of brown sugar (packed lightly)

1 tablespoon of baking powder

1/4 teaspoon salt

1/2 cup peanut butter

2 tablespoons of vegetable oil

2 eggs

3/4 cup of milk


First things first, preheat your oven to 375 degrees Fahrenheit. Next, mix together the brown sugar, flour, baking powder and salt in a large bowl with a whisk until they have combined together well. In a separate bowl beat together the oil, bananas, peanut butter, milk and eggs.

Now add your wet banana/egg mixture to the flour mixture and fold together until just combined. Take care not to over beat the batter because otherwise your muffins will become tough.

Spoon the batter into a lined or greased muffin tin and bake for about 20 – 25 minutes.

These muffins will save you the trouble of getting up extra early to prepare a breakfast for yourself! Prepare them on a Sunday and you’ll be good to go for the rest of the week.
