Chicken Penne Pasta

Looking for a something quick and easy to serve to the family for supper? Well look no further; this Chicken Penne Pasta is the perfect meal to surprise the family with on a regular weeknight. Some days we just aren’t feeling well enough to cook up a whole buffet for dinner tonight, but this chicken pasta will make up for that in quickness and in an abundant amount of flavor. This meal will definitely be one to add to the cookbook, the kids will are going to love it and so will you.

Ingredients:

  • ½ cup of freshly grated Parmesan cheese
  • 1 onion (sliced)
  • ¼ cup of dry white wine
  • 1 teaspoon of dried basil
  • 1 teaspoon of dried oregano
  • 4 skinless, boneless chicken breast halves (cut into cube shape)
  • 1 tablespoon of garlic (minced)
  • 2 tablespoons of olive oil
  • 1 can of diced tomatoes
  • 1 can of chicken broth
  • 1 tablespoon of cornstarch
  • ½ red bell pepper (thinly sliced and seeded)
  • ½ green bell pepper (thinly sliced and seeded)
  • 8 ounces of dry penne pasta

To begin, start of by using a large pot of water to boil. Add a pinch of salt into your water and stir. Once the water begins to bubble add in your pasta and cook for 8 to 10 minutes. Once the time has passed, place your pasta in a drainer ensuring all the water has been drained out. Using a bowl pour your cornstarch and chicken broth together and stir until completely smooth. Place to the side. Take a skillet with olive oil and place over medium heat. Pop your chicken and garlic into the skillet and cook/stir for about 10 minutes. To ensure your chicken has been fully cooked make sure that the color of the chicken does not appear pink. Now begin to add in your green and red pepper along with your onion. Continuously stir ensuring everything is cooked for about 5 minutes. Add in the tomatoes and stir for about 10 minutes. Pour your broth and cornstarch mixture along with the wine (optional) and add some oregano and basil for flavor. Lastly, pour in your cooked pasta and allow simmering over heat for about 5 minutes. Everything should be thoroughly cooked through and once done, remove your pasta and top with some Parmesan cheese.
